Las Delicias is a farm within the Fincas Mierisch family. A wide range of varietals are grown on this farm including Javanica, Geisha, Yellow Pacamara, and Red Bourbon. For this lot, we have Javanica. Javanicais a Java varietal with a story. Eleane’s grandfather purchased a bag of seeds labeled “Java”. They were skeptical at first, but the seeds did in fact turn out to be Java. The seeds were first planted at their farm “Limoncello” where the name was given Javanica to represent its new home in Nicaragua. This lot is processed as a cold anaerobic natural. The cherries are placed in sealed containers inside a cold room at a temperature of between 6-10 degrees Celsius for 48 hours. After the fermentation process, the cherries are laid out in direct sunlight for four days before being transferred to raised beds inside of a greenhouse.
Expect a fun red coffee here - red plum, red currant, and caramel!
