This coffee was grown by Johan Vergara at his farm Las Flores in the small village of San Isidro in Pitalito, Huila. Johan comes from a coffee producing family who began planting coffee in 1990. He now manages the farm with the help of his family and has planted exotics like Pink Bourbon, Tabi, Wush-Wush and this Sidra.

There are a few stages to the processing: first the whole cherry undergoes a dry aerobic fermentation for 24 hours. It is then transfered to Grainpro bags for 90 hours at an average temperature of 22ÂșC before being pulped, washed and sent to dry.
