A new coffee from one of our favorite producers in Costa Rica, Ivan Solis!
This coffee underwent what Ivan Solis calls "Candy Natural" The process starts by undergoing an anaerobic fermentation with mossto with a ratio of 1 liter to 100kg of cherries. The process takes 72 hours before the coffee hits the drying to beds for about 22 days until the desired humidity of 10% is reached.
As you probably can tell from the name of one of this - we were able to lock down the lot of this Red Catuai that won the COE in Costa Rica! We are really excited to offer as both filter and espresso roast!
For this COE winning lot we tasted red licorice, cola and in the spirit of the season, some halloween candies!
