HACHI No.1

This is the very first fruit of a personal project by Diego Bermudez called “Hachi”. This part of the project comes from his experimental farm located in the municipality of Tambo, Cauca and is focused on 100% biodynamic agriculture. Diego has always wanted to make a biodynamic coffee, which has its own soul and personality, using the region's plant diversity as fungicide and with as little intervention as possible throughout the entire growing/harvesting process.

This process involves the selective manual harvesting of coffee, choosing only the cherries that are at their ideal point of ripeness. They are then sent to undergo an aerobic fermentation process submerged in water with must recirculation for a period of 24 hours. The coffee is then removed from the bioreactor and placed to dry in the covered concrete patio of the Natural Friends project facilities. This unique place in the Cauca region provides ideal drying conditions, with constant wind and very low relative humidity, allowing the coffee to dry naturally in just three days, without overfermenting.

This is a truly unbelievable and stunning coffee that we could not have been more excited to get our hands on. The production was very small so green stock is quite limited. This coffee is a sensational drinking experience and shows what biodynamic production is all about.

Tasting like cotton candy, watermelon and black cherry with a silky and round mouthfeel.
