Another one from Fincas Mierish in Honduras! This time, it's the return of an Ethiosar!

Purchased towards the end of 2011, Cerro Azul was always a coffee farm. Most of the coffee trees on the farm are from the previous owner before the Mierisch family acquired it in 2011. Since then, they have only planted new varieties including Yellow Pacas, Laurina, Ethiosar and Geisha.

Ethiosar itself is a hybrid’s hybrid. It’s a cross between Sudan Rume and Sarchimore. This offspring is then crossed again with Villa Sarchi. This complex genetic diversity gives the variety a strong resistance to leaf rust and a vibrant cup profile.

This lot undergoes a washed process. First, a dry ferment takes place in large open-air fermentation tanks for 24-48 hours. The remaining mucilage then gets rinsed off and the coffee is then dried on raised beds inside of a greenhouse for 16 days.
